Apparently, these truffles, inspired by Aja of Penticton, (who taught a class at the Shatford Centre where HANS members were present) are just a delight. For more about Aja, including the cooking classes she offers and meals she can prepare, look at her website at:

3/4 cup dates – about 20
¾ cup water
½ c ground almonds
¼ cup sunflower seeds
¼ cup coconut for mixture
1/8th cup coconut to roll trifles in
½ tsp vanilla
1 tsp agave or sweeter
½ cup pure Dutch cocoa powder
Warm dates in a small pot with ¾ cup water for 8 minutes. With an immersion blender, blend dates with water until smooth. Add the rest of the ingredients. Mix to a stiff paste. Put in the refrigerator for 15 minutes. Form into small balls and roll in remaining 1/8th cup of coconut.
